I’ve been vegetarian for over 20 years now – my diet is mostly vegan – and I always felt like my diet was healthy and well-balanced. But in 2015 I felt super exhausted, weak and run-down most of the time. My stomach wasn’t doing great either and I had to cope with lots of stomach ache.
A complete blood count at my doctors place revealed severe signs of deficiency regarding vitamin b12, iron and vitamin d. The doctors recommendation: Lots of supplements or changing my diet to a non-vegetarian diet.
Since I was already thinking about trying out different diets for a while, I finally wanted to try one out. So after some online research and lots of conversations with friends, I decided to go with the paleo-diet. Especially the easy digestion of the food and the big plus of energy sounded great to me.
What is Paleo?
The paleo-diet is all about eating primal and natural. It’s an effort to eat like we used to eat back in the day. Meat, fish, fruits, nuts, vegetables and herbs are okay to eat – grain, sugar and dairy products are taboo. Lean proteins and healthy fats are the main parts of the diet. So it’s all about removing the foods that are at odds with our health (grains, legumes, and dairy) and increasing our intake of vitamins, minerals, and antioxidants.
Because I didn’t want to eat meat, fish and eggs, I tried to live on a vegetarian version of the paleo-diet to begin with. Over the next few months I was able to witness the benefits of a paleo-compliant diet and instantly knew, that living a dairy-, grain- and sugar-free life is the way to go for me. But I also recognised that my intake on protein was absolutely insufficient.
That’s why I decided to eat eggs again. Even though my supply of nutrients seemed to be well-balanced now, I wasn’t happy about eating eggs. So I began searching for a vegan way of the paleo diet.
The start of “veggie paleo”
I quickly recognised that my dream of a 100% paleo-complaint vegetarian or vegan diet wasn’t really possible and also not the right way to go for me. So I needed to find a way to combine the benefits of paleo with a vegetarian or vegan diet.
After additional research I decided to add more and more food like lentils (soaked over night) and white rice to my diet and my picture of a veggie paleo diet began to shape.
veggie paleo is my take on delicious and easy to cook recipes so we can enjoy the benefits of a grain-, dairy- and sugar-free diet as a vegetarian or vegan!
