Paleo Porridge with Fruits
For me, porridge is almost the perfect breakfast. It's warming, provides you with plenty of energy, tastes delicious and is super easy to adapt to your daily cravings (fruits, chocolate, caramel, you name it...).
The only problem I have with porridge: My stomach! My stomach doesn't like grains at all. And that's why I am extremely happy with this absolutely delicious, grain-free Paleo Porridge. The key for a happy stomach: ground flax seed!
Quick and easy to make, super tasty, gluten-, refined sugar- and dairy-free and in this form also completely paleo! Yay! 😉
Ingredients
- Bananas - 2
- unsweetened almond milk - 700ml
- ground almonds - 50g
- desiccated coconut - 50g
- ground flax seed - 50g
- Maple syrup - 1-2 tbsp
- Cinnamon - 2-3 tsp
- Vanilla - a pinch
- Fruits of your choice
Instructions
- Pour almond milk into a pot, add ground almonds, ground flax seed, desiccated coconut, maple syrup and cinnamon and bring everything to boil while stirring regularly. Reduce heat and let everything simmer for about 5 minutes. Your porridge should be viscous by then.
- Squish bananas with a fork or potato smasher until you get a smooth mixture. Add the banana-mixture, als well as the vanilla into the pot, stir well and let everything simmer for 2 more minutes.
- Heat up fruits of your choice in a pot and let them simmer for a bit. Serve with porridge,
