Chia Cinnamon Chocolate Pudding
I know, there seem to be way too many chia recipes right now. Chia is everywhere and the hype around the superfood just doesn't stop. But I have to admit: I am a chialiever, I mean chia-believer, well let's just say I am a big chia-fan! 😉 Why? Because chia is nutritious, extremely versatile to use and come on, it's delicious!
Just take this recipe as an example: Combine chia with almond- or coconut milk, cocoa powder, maple syrup and a bit of cinnamon and you get a dreamy Chia Cinnamon Chocolate Pudding! Yum! It's also quick and easy to make. You just need to give the seeds a bit of time (4-6h) in the fridge to get the full flavor and to swell up a bit.
Ingredients
- unsweetened almond milk - 475ml
- Chia seeds - 120g
- unsweetened cocoa powder - 30g
- Maple syrup - 4-5 tbsp
- Cinnamon - 1 tsp
- Optional Ingredient:
- Vanilla extract - 1 tsp
Instructions
- In a bowl, mix almond milk with maple syrup. Add cocoa powder and cinnamon and mix well until you have a nice homogenous liquid with a bit of foam. Check if the chocolate and sweetness level is up to your liking and add more cocoa powder or maple syrup if needed.
- Add chia seeds and vanilla, stir well, pour everything in a sealable vessel and put the vessel in a fridge for about 4-6 hours. Important: Stir again after half the time to make sure the chia seeds won't stick to the ground of the vessel.
- Add some fresh berries and enjoy!
Tip: If you don't have almond milk at hand, just use some coconut milk or self made coconut yogurt!
