Asparagus Strawberry Salad with Pine Nuts
As you all know, May is high season for asparagus and strawberry. So what could be more fitting than Asparagus Strawberry Salad? How about an "Asparagus Strawberry Salad with Pine Nuts and Orange-Honey-Dressing"!? 😉
Quick and easy to make, healthy and whether you make it as a main or a side dish, with rucola or lamb's lettuce, the Asparagus-Strawberry-Salad is always super tasty and refreshing!
Ingredients
- Salad
- white asparagus - 500g
- green asparagus - 250g
- Arugula - 250g
- Strawberries - 250g
- Pine nuts - 70g
- Dressing
- Olive oil - 8 tbsp
- Orange juice - 4 tbsp
- Balsamic vinegar - 2-3 tbsp
- Honey - 2 tbsp
- Salt
- Pepper
Instructions
- Peel and half the white asparagus, wash and half the green asparagus.
- Add water and a pinch of salt to a big cooking pot and bring it to boil. Once the water is boiling, add white asparagus, cook for 7 minutes, add green asparagus and cook for 5 more minutes.
- Meanwhile roast pine nuts in a pan (without oil) until they are gold-brown. Set aside.
- Wash arugula (or lamb's lettuce), cut off the stem and shake dry. Wash strawberries and half them.
- For the dressing just mix olive oil, balsamic vinegar, orange juice and honey and season with salt and pepper.
- Spread arugula and strawberries on a plate, arrange pieces of white and green asparagus, spread pine nuts and drizzle with orange-honey-dressing.
Tip: If you want to try something new, go with lamb's lettuce, parsley and small shreds of beetroot! You can also jazz up the dressing with some vanilla. Goes really well with the nutty taste of the pine nuts!
