Quick and Easy Shakshuka
I know I know, everyone is talking about it right now and so do I... Why? Because I absolutely love Shakshuka and understand completely why everyones belly is craving for it.
The poached eggs in tomato sauce are super easy and fast to make (if you go for canned tomatoes), taste fantastic (especially combined with bread), are paleo-compliant and they also make for a fantastic side or main dish!
Ingredients
- Canned diced tomatoes - 500g
- Eggs - 4
- Onion - 1
- Sweet Pepper - 1
- Garlic - 1 clove
- Olive oil - 3 tbsp
- Tomato paste
- Cumin
- Sweet pepper powder
- Salt
- Cayenne pepper
- Fresh coriander green
- Parsley
- Chili powder
Instructions
- Cut onions, garlic and pepper into small pieces. Heat some olive oil in a pan and fry everything until the onions become slightly translucent.
- Add tomatoes, tomato paste and spices. Let everything fry for about 10-15 minutes.
- Spoon four holes into the tomato sauce and add one egg each. Put lid on the pan and let everything fry for another 5-8 minutes until the egg white is firm and the yolk is still fluid inside.
- Garnish with fresh coriander green and enjoy!
