Sweet Potatoes with Fruits, Curry and Coconut
I am pretty sure that this sweet potato curry recipe is one of the reasons why I love sweet potatoes so much:
It's super quick and easy to make, tastes delicious whether its hot or cold, goes really well as a main or side dish and the addition of pinapple and mango gives it an undreamed-of fruity, exotic note!!
Ingredients
- Sweet potatoes - 2
- Pineapple - 1/2
- Mango - 1
- desiccated coconut - 6 EL
- Coconut oil - 2 EL
- Curry powder - 1-2 EL
- Salt
- Pepper
- Optional Ingredients:
- Turmeric
Instructions
- Chop the sweet potatoes, pinapple and mango into small pieces.
- Fry the sweet potatoes in a pan with some coconut oil. Add the coconut flakes, salt and pepper.
- Add the manglo slices and fry them until the color is up to your liking.
- In the end add the pineapple slices. Stir well and let them heat up a bit. Enjoy!
