Coconut Rice Pudding with Vanilla and Fruits
This coconut rice pudding is one of my favourite breakfast or desserts. The creamy coconut rice pudding topped with cinnamon, a pinch of vanilla and fresh fruits is just soooo good! 😉
Yes, rice contains anti-nutrients - phytates and lectins in the case of rice - and they can be quite irritating and harmful to human digestion. BUT cooked white rice does not contain any anti-nutrients. All anti-nutrients are present in the hull, but they get removed during processing/cooking!
Ingredients
- Rice pudding - 125g
- Coconut milk - 1/2 cup
- Water - 375ml
- Honey - 1 tbsp
- Cinnamon - 1 tbsp
- Bourbon vanilla
- Salt
Instructions
- Add water, coconut milk, rice, salt, honey or maple syrup and vanilla into a pot, and let it boil for a moment. Decrease the temperature and let its simmer for about 30 minutes. Steer consistently.
- Chop some fruits into pieces. Add 2/3 of the fruits to the rice and mix it.
- Portion the rice, drizzle some cinnamon over the rice and add the rest of the fruits on top. Enjoy! 🙂
