Roast sesame seeds for 1 minute in a pan at medium heat. Set aside to cool down.
Use a spiralizer to cut the beetroot into spirals, put them in a big bowl and cut them into your desired length with a scissor.
For the dressing, mix the juice of an orange with olive oil, honey and season with salt and pepper. Add arugula leaves and 3/4 of the sesame seeds, drizzle with orange-dressing and mix well.
Garnish with the rest of the sesame seeds, serve and enjoy!
