Self made Almond Milk
Self made almond milk isn't just way less expensive, it also tastes better, is a wonderful addition in your low-carb diet and you know exactly that there are no unnecessary ingredients in there.
All you need: Almonds, fresh water and a nut milk bag. (A fresh kitchen towel works as well, it's just not as easy to clean afterwards.)
Ingredients
- Almonds - 200g
- Water - 1 L
- Optional Ingredients:
- Maple syrup - 1 tsp
- Vanille - a small pinch
- Salz - a small pinch
Instructions
- Place your almonds in a strainer and wash them thoroughly.
- Put them into a big pot or bowl and let them soak in 1L water for a minimum of 12 hours. Make sure your vessel of choice is covered by a kitchen towel.
- Once again place the almonds in a strainer and wash them with fresh water.
- Blend the soaked and washed almonds with 1L of fresh water in a blender or food processor. - If you feel like it, you can add some maple syrup or honey, as well as some vanilla and a small pinch of salt! Suuuuper yummy!
- Finally pour the almond milk mixture through your nut milk bag (or kitchen towel) into a big bowl or pot. - Squeeze out the leftover nuts to get that extra bit of milk out of them.
- Consume your self made almond milk immediately or pour it into a sealed jar or bottle. While refrigerated, your almond milk should stay fresh for about 3-5 days.
Tip: The leftover nut pulp is a wonderful ingredient for cooking and baking. You just need to use it soon after making it. - For inspiration, see Libby Bakers article about "What to do with leftover almond pulp" at OneGreenPlanet.org.
