Chicory-Orange-Grape-Salad with Pistachios
Not only does this Chicory-Orange-Grape-Salad look amazing, it also tastes delicious, acts acid binding, is full of vitamin c and dietary fibre and is easy to adjust to everyones personal taste.
Whether you go for grapes and chopped pistachios or eggs and walnuts, this salad is always a refreshing side dish to hefty meals. 🙂
Ingredients
- Chicory - 1 shrub
- Oranges - 2-3
- Grapes - 200g
- Chives - 1 bundle
- chopped pistachios - 2 tbsp
- Seasoned salt
- Pepper
- Optional Ingredients:
- Eggs - 2
- Walnuts - 1 cup
Instructions
- Pluck off the chicory leaves and wash them.
- Peel the oranges, remove the skin and cut them into slices. Squeeze the rest of the orange and collect the juice.
- Wash the chives, chop them and mix half of the chopped chives with the collected orange juice. Season with a pinch of seasoned salt and pepper.
- Once the chicory leaves are drained, place them on two plates while trying to create a star shape.
- Place the sliced oranges in between the chicory leaves and drizzle with dressing. Garnish with chopped pistachios and chives.
Tip: If you are not vegan, try swapping the pistachios with walnuts and add some sliced eggs to the salad! Pretty tasty combination! 😉
