Oven Baked Ratatouille with Rosemary
Every time the weather turns bad, I instantly yearn after a warm and hearty meal. So how about some delicious ratatouille with rosemary!? ?
The highlight: It’s not your typical ratatouille out of the pot. This ratatouille is made in your oven! And if you are one of the lucky ones who already tried ratatouille out of the oven, you probably know, that it has a much more intense flavour. All thanks to the aroma which develops while cooking the vegetables in the oven instead of a pot. ?
Ingredients
- Sweet pepper - 3 (red, yellow and green)
- Zucchini - 1
- Vegetable onion - 1
- Tomatoes - 400g
- Garlic - 4 cloves
- Lemon juice - 2 tbsp
- Olive oi - 3 tbsp
- Rosemary - 1-2 branches
- Vegetable broth - 1/2 cup
- Salt
- Pepper
Instructions
- Preheat your oven to 430F. Cut your favourite vegetables like sweet peppers, tomatoes (remove the seeds), onions and zucchini into slices and put them in a big bowl.
- Add some peeled cloves of garlic to the vegetables (you do not need to chop the garlic!), as well as fresh lemon juice, olive oil and some branches of fresh rosemary. Season with salt and pepper and mix well.
- Put everything into an ovenproof bowl or pot, add about 1/2 cup of vegetable broth and put it in the preheated oven for about 30 minutes. Stir well after half of the time to mix everything nicely.
Tip: Goes very well with some self made bread!
